1 pint tomatillos, husked, rinsed and chopped
1 bunch fresh cilantro, chopped
1 hot pepper, seeds removed, chopped
1 tsp minced garlic
2 Tbsp chopped onion
Tomatillos will remain sticky feeling even after washed. This is normal. Chop all ingredients or run through a food processor or blender. Cover and refrigerate for at least one hour. Serve with chips or along side chicken or pork. It also goes great with eggs!
Wash arugula and chop, stems and all. Meanwhile roast 1/2 cup walnuts in oven until golden. Cool. Chop one pear. Place arugula and pear in a bowl. Drizzle with olive oil and balsamic vinegar. Sprinkle with sea salt and roasted walnuts. Toss and enjoy! You may also try this salad with dried cranberries or fresh apples instead of the pear.
