New Life
The days are getting noticeably longer now. All around us there is new life. Some more obvious than others, like new calves and thousands of seedlings emerging in the greenhouse. But others are more subtle, like the sweet smell of the soil as the sun hits it mid-day. The birds becoming more active and the animals seeming more energetic. Cravings for fresh tomatoes and fresh greens. Spring is getting closer and with it comes an awakening of the earth and its creatures. (Although we could have done without an awakening groundhog…ON GROUNDHOG DAY!!!…that burrowed into our well house that windy, freezing night. We awoke to frozen pipes, again, in our milk house)! We are reminded regularly of the mixed bag that is life and we take the good with the bad Shedding coats and scarves as the day progresses and putting them back on as the night approaches. Soon enough it will be spring and until then, we will enjoy the changes (and dream about the sweet crunch of fresh lettuce and the first summer tomato sandwich)!

What’s Available From the Farm This Month:
Microgreeens Mix, Carrots, Winter Squash, Onions, Fingerling Potatoes
Chicken, Beef, Pork, Turkey
Thai Style Carrot Soup
1 Tbsp coconut oil
1/2 onion, chopped
3 cloves garlic, diced
1 lb carrots (4 cups chopped)
2 cups vegetable or chicken stock
2 cups water
1/3 cup peanut butter
1 Tbsp (or to taste) Thai green curry paste
1 tsp (or to taste) Thai red curry paste
Blend all ingredients in a vitamix or food processor. Enjoy!

Evening on the Farm
The day after it hit 75 degrees, we had a snowstorm. Here a couple of the dairy cows are eating their hay.
It did make for a beautiful sunset!
