Produce available from Eight Mile Creek Farm this month:

Carrots,  Beets,  Scarlet Queen Turnips,  Daikon Radishes,  Yellow and Red Onions,  Rutabagas,  and Vermont Cranberry Beans

 

Roasted Rutabagas and Baby Heirloom Carrots

2 large rutabagas, peeled and diced small (about 1/2 inch cubes)

1 bunch baby heirloom carrots

6-8 garlic cloves, peeled

Scrub baby carrots but do not peel.  You may leave both ends on the carrots.  Spread diced rutabagas, whole garlic cloves and carrots on roasting pan and drizzle with very generous amount of olive oil.  Sprinkle with sea salt.  Roast at 400 degrees until vegetables are tender.

As March comes in like a lion, so have the chores on the farm!  Calves are coming, spurred on often by the turbulent storms.  We are waiting on the arrival of the baby piglets, checking mom more frequently now.  Our greenhouse is filling up with flats of onions, leeks, flowers, sage, parsley, kale….The tiny seeds germinating into tiny seedlings.  As the snow melts, the mud season begins.  Messy!  Well, the earthy fragrance of the soil as it starts to warm from the sun helps us know we are trending toward springtime!  Our overwintered veggies in the high tunnels have started to rebound from the bitter cold of this winter and their growth proves that spring is coming!

  1. I am going through past years, before I knew you. This is so beautiful. The pig parade, with blue shadows in the snow. Jenny and piglet… Different stature, but probably the same weight. Luckiest dog in the world. Pig, too.
