Spring planting string beans, coming across lots of earthworms like this guy. Can you spot him in the middle of the photo between the two red colored bean seeds? Our organic soil is loaded with them due to the large amount of organic matter present in the soil. We plant a cover crop mix each fall, and apply compost in winter, then till the cover crop in come spring. All of this adds organic matter and thus helps boost soil fertility. Our soil is truly “alive.” The vegetables you get from us are therefore loaded with vitamins and minerals as they grow from the health of the soil, not from chemical fertilizers. So the veggies are loaded with nutrients and we are giving back to the earth. Healthy soil is the basis for organic farming. The earth worms are a big help, too!
4 scallions, chopped
4 Tbsp fresh squeezed lime juice
4 Tbsp Dijon mustard
6 Tbsp mayo
2 Tbsp olive oil
2 cups EMCF buttermilk
2 cloves crushed garlic
sea salt and pepper to taste

1 bunch joy choi, ends timed, rinsed, and rough chopped
1 inch piece of fresh ginger, peeled and minced
sesame oil
cooked rice or rice noodles
1 package EMCF ground pork, ground beef, or steak tips
Heat oil over medium heat and add pork or beef. Cook, stirring frequently until mostly cooked through, about 7 minutes. Add minced ginger and joy choi. Stir fry for about 3 minutes, stirring frequently. Season with sea salt and pepper. Cook another 2 minutes. Place rice or noodles on serving plates and top with vegetable meat mixture.
