Produce for This Second Week of September 2015

Summer Mesclun Mix,  Heirloom Cherry Tomato Mix,  Large Heirloom Tomatoes,  Roma Tomato and Tomatillo Mix,  String Bean Mix,  Red Cabbage,  Summer Squash,  Parsley

 

Good wishes and prayers go out to all the children (and adults)  starting school this week.  My Thomas starts 11th grade and Laura is now a junior at Oneonta.  Hopes for a healthy, happy, productive school year!

Heirloom Tomato Salsa

1 Quart heirloom tomatoes, chopped

3 cloves garlic, minced

1 bunch cilantro or parsley, minced

1 hot pepper, minced

sea salt to taste

fresh squeezed lime juice from 1 lime

Mix all ingredients.  Cover and chill for one hour

Chillaquiles

Thanks to one of our very special Peekskill customers for this delicious recipe!

Peel husks from tomatillos and rinse.  Sticky feel will stay.  Roast quartered:  tomatillos, tomatoes, onion, 3-4 cloves garlic with olive oil on baking sheet sprinkled with sea salt.  Puree.  In a pan with olive oil, toast tortilla chips until crunchy.  Throw pureed veggies over.  Break an egg or two.  Mix until egg is cooked.  Sprinkle with feta cheese, minced  cilantro or parsley and sour cream.  Enjoy for breakfast or anytime!

The Peace of Wild Things

When despair for the world grows in me

and I wake in the night at the least sound

in fear of what my life and my children’s lives may be,

I go and lie down where the wood drake

rests in his beauty on the water, and

the great heron feeds.

I come into the peace of wild things

who do not tax their lives with forethought

of grief.  I come into the presence of still water.

And I feel above me the day-blind stars

waiting with their light.  For a time

I rest in the grace of the world and am free.
