Heat 1 Tbsp oil in large nonstick skillet over mdm high heat. Cook peppers and onions 4 min. or until onions are translucent, stirring frequently. Add eggplant and garlic. Cook 5 min. or until eggplant is tender. Stir in tomatoes and beans and cook 3 min. Add wine, vinegar, and pepper flakes. Cook 2 min. or until tomatoes are slightly soft.. Remove from heat, stir in basil and salt and pepper o taste. Sprinkle evenly with cheese.
Sicilian Escarole Salad
Add minced garlic to olive oil and let sit at least 10 min. Stir pepper, oregano, basil, and ed pepper flakes into vinegar. Add chopped onion and stir to mix. Wash and dry the escarole and separate the leaves. Tear leaves into 1/2 inch pieces. Add to vinegar and garlic, and season with pepper. If using anchovies, drain, break into sections and add to the olive oil. Pour olive oil over salad, and sprinkle with salt. Mix.
