Cut stems from Swiss Chard and reserve chard leaves for Swiss Chard Wraps (spoon tuna or chicken salad or your favorite lunch topping in the center of each leaf and roll into a healthy wrap; or saute’ with garlic and olive oil). Cut stems into three inch pieces.
Slice zucchini into 3 inch pieces, then into large match sticks.
Bring a large pot of generously salted water to a boil. Add vegetables and blanch for 2 minutes, until color of veggies brightens. Remove with a slotted spoon. Arrange vegetables on a platter and refrigerate for at least 1 hour. Arrange heirloom cherry tomatoes on platter, and serve with your favorite dip or dressing for dipping. Enjoy by the pool or lake!
4 mdm tomatoes, seeded and diced
1/2 cup chopped cilantro
1/3 cup chopped onion
1 small hot pepper, chopped
2 Tbsp fresh squeezed lime juice
1/2 – 2/3 tsp sea salt
Mix all ingredients in a bowl and refrigerate for at least 2 hours.
